Tour Overview: Basque cuisine in and around San Sebastian is considered to be the best food in Spain. It is almost impossible not to get a good meal in this region. In fact San Sebastian boasts more Michelin star restaurants per square meter than any other capital in Spain.
With plenty of raw materials to work with (fresh seafood, locally grown produce, and meat and game), Basque chefs have taken traditional recipes and built upon them, creating a world-class cuisine. From the sea come dishes like pil-pil, a delicate green sauce used in making cod. From the garden, there are beans and peppers, which are used to create menestra, a mixed vegetable dish, or pisto, a type of ratatouille, made of tomatoes, marrow and peppers. Complimenting the dishes are some of the best wines in the world--Rioja and Alavesa.
You are invited to join one of Basque cuisine's founding fathers for a week of culinary discovery. Chef Luis Irizar is the winner of numerous awards and the author of several cookbooks. He has dedicated himself to the vocation of teaching both amateurs and professionals alike at his cooking school in San Sebastian. You'll enjoy hands-on cooking lessons with Chef Irizar, along with excursions to coastal villages, a visit to the new Guggenheim Museum in Bilbao, and meals in Michelin star restaurants.

Tour Overview: Andalusia…a land of bullfights and flamenco; of white towns, beautiful horses, and romance. It is the region that most people associate with their idea of Spain. The cuisine is simple, relying on the fresh ingredients that are produced in this area. From Jerez, come giant shrimp and delicious seafood. From the mountains, come game, lamb and fowl. Then there are the olives, the oranges, pine nuts, tomatoes, wine, and of course, the sherry.
Gazpacho is one of Andalusia's best-known dishes. Tapas is a ritual, and was probably created in Southern Spain. Each tapas bar has its own specialty; some of the Seville specialties include pringa (a stew of vegetables, pork, and sausage), espinacas con garbanzos (refried chickpeas and spinach), and pavias (strips of salt cod fried in olive oil).
We invite you to taste and discover Southern Spain on a six-night culinary tour. For three nights, you'll experience the city of Seville with its tapas bars, Alcazar, and cathedral. Accommodations will be at a historic four-star hotel in the heart of the old Jewish quarter. Then you'll leave the city and go into the hills, staying at a restored hacienda near the white village of Arcos de la Frontera.
